Experience the majestic flavors of the Kashmir Valley with this vibrant, rich, and deeply warming slow-cooked potato curry.
Unlike standard restaurant versions, a true Kashmiri Dum Aloo uses absolutely no onions or tomatoes. Instead, it relies on a silken yogurt base infused with the bold warmth of dry ginger, fennel, and our signature Kashmiri Chilli Powder. The baby potatoes are fried until golden, pierced to absorb the fragrant sauce, and cooked under "dum" (steam) for an incredibly tender, flavor-packed vegetarian centerpiece.
Ingredients
- 500g baby potatoes, boiled until just tender and peeled
- 1 cup thick, full-fat plain yogurt, whisked smooth
- 1.5 tbsp Kashmiri Chilli Powder (mixed with 2 tbsp water)
- 1 tbsp Fennel Seeds Whole (coarsely ground into a powder)
- 1 tsp Dry Ginger Powder
- 1 Sikkim Black Cardamom Whole, lightly crushed
- 1 inch Cinnamon Bark
- 3 Nagercoil Cloves
- 1 tsp Wild Black Mustard Seeds (or Shahi Jeera)
- 1/2 tsp Black Salt Powder
- 3-4 tbsp mustard oil (or vegetable oil)
- Salt to taste
Method
Step 1 Using a fork or a toothpick, prick the peeled boiled baby potatoes multiple times all over. This crucial step ensures they absorb the rich gravy later.
Step 2 Heat the mustard oil in a heavy-bottomed pan until it reaches its smoking point (to remove the raw pungency). Lower the heat and deep/shallow fry the baby potatoes until they are crisp and golden brown on all sides. Remove them and set aside.
Step 3 In a mixing bowl, whisk the thick yogurt thoroughly with the freshly ground Fennel powder, Dry Ginger Powder, and a pinch of salt. Ensure there are no lumps.
Step 4 Remove excess oil from the pan, leaving about 2 tablespoons. Over low heat, add the Black Cardamom, Cinnamon Bark, Cloves, and Mustard Seeds. Let them crackle for a few seconds. Pour in the Kashmiri Chilli Powder water-paste and stir immediately to create a vibrant red base.
Step 5 Turn the heat down to the absolute lowest setting. Slowly pour in the whisked yogurt mixture, stirring continuously and vigorously in one direction to prevent the yogurt from splitting. Keep stirring until the mixture comes to a gentle simmer.
Step 6 Add the fried potatoes to the simmering gravy. Cover the pan with a tight-fitting lid (the "Dum" method) and cook on low heat for 10-15 minutes. The oil will separate and float to the top, leaving you with a glossy, intensely flavorful dish. Garnish with a pinch of black salt and serve hot with naan or rice.
Chef's Tip: Never add cold yogurt straight to a hot pan, or it will curdle. Ensure your yogurt is at room temperature, and whisk it perfectly smooth before slowly incorporating it into the tempering over very low heat.
