The magic of this creamy yellow lentil dish lies in the "Tadka" (tempering). We top perfectly cooked lentils with a sizzling infusion of cumin, whole red chilies, and garlic bloomed in hot ghee. Ingredients
- 1/2 cup Toor Dal (Split Pigeon Pea)
- 1/2 cup Moong Dal (Petite Yellow Lentils)
- 1/2 tsp Turmeric Powder
- 1 medium onion, finely chopped
- 1 medium tomato, finely chopped
- 1 tsp Garlic Paste
- 1 tsp Ginger Paste
- 3 tbsp ghee
- 1 tsp Cumin Seeds Whole (Jeera)
- 1/2 tsp Wild Black Mustard Seeds
- 2-3 dried Kashmiri Red Chilli Whole
- 1/2 tsp Kashmiri Chilli Powder
- 1 tbsp Kasuri Methi (Fenugreek Leaves)
- Salt to taste & fresh coriander leaves
For the Tadka (Tempering):
Method
Step 1 Wash both the Toor Dal and Moong Dal together until the water runs clear. Add them to a pressure cooker or large pot with 3 cups of water, Turmeric Powder, and a pinch of salt. Cook until the lentils are completely soft and mushy. Whisk them lightly and set aside.
Step 2 In a separate deep pan, heat 1 tablespoon of ghee. Sauté the chopped onions until translucent. Stir in the Garlic Paste and Ginger Paste, cooking until fragrant. Add the chopped tomatoes and cook until they break down and soften.
Step 3 Pour the cooked, whisked lentils into the onion-tomato base. Stir well, adjusting the consistency with a little warm water if necessary. Let it simmer gently for 5 minutes. Add salt to taste.
Step 4 Now for the crucial step—the Tadka! In a small tempering pan, heat the remaining 2 tablespoons of ghee until it is piping hot. Add the Mustard Seeds and wait for them to pop, followed quickly by the Cumin Seeds.
Step 5 Toss in the whole Kashmiri Red Chillies. Remove the small pan from the heat immediately, add the Kashmiri Chilli Powder, and quickly pour the sizzling, aromatic ghee directly over the simmering lentils.
Step 6 Crush the Kasuri Methi (Fenugreek Leaves) between your palms and sprinkle it over the top. Garnish with fresh coriander and serve steaming hot.
Chef's Tip: Adding the Kashmiri Chilli Powder to the tadka off the heat is the secret to a vibrant, bright red tempering. If you add it while the pan is on the flame, the delicate chilli powder will burn and turn bitter.
