Hailing from the Chettinad region of Tamil Nadu, this dish is famous for its complex, freshly ground spice paste. Earthy mushrooms act like sponges, soaking up the intensely aromatic gravy made from roasted coriander, fennel, and fiery red chillies. It is a stunning vegetarian main course that pairs perfectly with flaky parottas, dosas, or steamed rice.
Ingredients
- 500g button mushrooms, washed and halved
- 2 large onions, finely chopped
- 2 medium tomatoes, finely chopped
- 1 tbsp ginger-garlic paste
- 1 tsp Black Mustard Seeds
- 1 sprig fresh curry leaves
- 1/2 tsp Pure Ground Turmeric
- 2 tbsp coconut or vegetable oil
- Salt to taste
- 2 tbsp Coriander Seeds
- 1 tsp Cumin Seeds
- 1 tsp Fennel Seeds
- 4-5 dried Kashmiri Red Chillies
- 1 inch Cinnamon Bark
- 3 Cloves & 2 Green Cardamom
- 1/2 cup fresh grated coconut
For the Chettinad Masala Paste:
Method
Step 1 In a small pan over low heat, dry roast the coriander seeds, cumin, fennel, dried red chillies, cinnamon, cloves, and cardamom until highly fragrant (about 2-3 minutes). Add the grated coconut and roast for another minute until lightly golden. Let it cool, then blend with a splash of water to form a smooth, thick paste.
Step 2 Heat oil in a heavy-bottomed kadhai or pan. Add the mustard seeds and let them splutter. Toss in the curry leaves, immediately followed by the finely chopped onions. Sauté until the onions turn a deep golden brown.
Step 3 Stir in the ginger-garlic paste and cook for one minute until the raw smell disappears. Add the chopped tomatoes, turmeric, and a pinch of salt. Cook until the tomatoes are completely soft and mushy, and the oil starts leaving the sides of the pan.
Step 4 Pour your freshly ground Chettinad masala paste into the pan. Stir well and cook for 3-4 minutes to allow the spices to meld with the onion-tomato base.
Step 5 Toss in the halved mushrooms. Stir well so every piece is coated in the thick masala. Add about 1/2 cup of warm water, cover the pan, and simmer for 8-10 minutes. The mushrooms will release their own water, creating a luscious gravy.
Step 6 Once the mushrooms are tender and the gravy has reached your desired consistency, garnish with fresh coriander leaves. Serve hot!
Chef's Tip: Dry roasting whole spices just before cooking is the ultimate secret to an authentic Chettinad dish. Do not rush this step—roasting on a low flame ensures the spices release their essential oils without turning bitter.
