Ingredients
- 1 cup Red Kidney Beans (Rajma), soaked overnight
- 2 tbsp ghee or vegetable oil
- 1 tsp Premium Cumin Seeds
- 2 large onions, finely grated or puréed
- 1 tbsp ginger-garlic paste
- 2 large tomatoes, puréed
- 1 tsp Pure Ground Turmeric
- 1 tsp Coriander Powder
- 1/2 tsp Kashmiri Chilli Powder
- 1/2 tsp Punjabi Garam Masala
- 1 tbsp fresh coriander leaves, chopped
- Salt to taste
- Steamed Basmati Rice, to serve
Method
Step 1 Drain the soaked rajma and transfer to a pressure cooker with 2 cups of fresh water and a teaspoon of salt. Cook for about 4-5 whistles on medium heat until the beans are completely tender and easily mashable between your fingers. Set aside, keeping the cooking liquid.
Step 2 In a heavy-bottomed pan or kadhai, heat the ghee over a medium flame. Add the cumin seeds and let them crackle for a few seconds until their aroma fills the air.
Step 3 Add the grated onions and sauté patiently for 8-10 minutes until they turn a deep golden brown. Stir in the ginger-garlic paste and cook for another minute until the raw smell completely disappears.
Step 4 Pour in the tomato purée along with the turmeric, coriander powder, and Kashmiri chilli powder. Cook the masala, stirring frequently, until the oil begins to separate and leave the sides of the pan.
Step 5 Add the boiled rajma along with its cooking water to the cooked masala. Mash a few beans with the back of your spoon against the side of the pan—this naturally thickens the gravy and makes it incredibly creamy.
Step 6 Let the curry simmer on low heat for 10-15 minutes so the beans absorb all the robust flavors. Stir in the garam masala and garnish with fresh coriander. Serve piping hot over steamed basmati rice.
Chef's Tip: Don't rush the onions! Sautéing the grated onions until they are deeply caramelized is the secret to a rich, robust gravy. Mashing a few kidney beans into the sauce gives it that authentic, creamy dhaba-style texture without needing any heavy cream.
