This regal dish is defined by its deep, fiery red color and the robust warmth of mountain spices. Traditionally slow-cooked without onions or garlic, its rich gravy is built entirely on whisked yogurt, fragrant fennel, warming ginger, and premium Kashmiri chillies. It is a masterpiece of slow-cooking that transforms simple cuts of meat into a spectacular celebratory feast.
Ingredients
- 500g bone-in lamb or mutton, cut into bite-sized pieces
- 3 tbsp mustard oil (or ghee)
- 1/2 cup thick plain yogurt, whisked smooth
- 2 tsp Kashmiri Chilli Powder (mixed with 2 tbsp water to form a paste)
- 1 tbsp Fennel Seeds (ground into powder)
- 1 tsp dry ginger powder (Sonth)
- 1/4 tsp Asafoetida (Hing)
- 4 Cloves
- 3 Green Cardamom Pods
- 2 Black Cardamom Pods
- 1 inch Cinnamon Bark
- 2 Bay Leaves
- Salt to taste
Method
Step 1 In a heavy-bottomed pot or Dutch oven, heat the mustard oil until it reaches a smoking point to remove its pungency, then lower the heat. (If using ghee, simply melt it over medium heat). Add the asafoetida, followed immediately by the cloves, green and black cardamom, cinnamon, and bay leaves. Let them crackle for 10 seconds.
Step 2 Add the lamb pieces to the pan. Sauté over medium-high heat for 8-10 minutes, turning frequently, until the meat is browned on all sides and the juices have mostly evaporated.
Step 3 Lower the heat and add the Kashmiri chilli paste. Stir continuously for 2-3 minutes. This step is crucial—the chilli paste blooming in the oil is what gives Rogan Josh its signature deep red color.
Step 4 Remove the pot from the heat momentarily to cool down slightly. Gradually whisk in the smooth yogurt, stirring constantly to prevent it from splitting. Once fully incorporated, return to low heat and cook until the oil starts separating from the masala.
Step 5 Stir in the fennel powder, dry ginger powder, and salt. Add 1.5 to 2 cups of hot water. Cover tightly and let it simmer gently on a low flame for 60 to 75 minutes, or until the lamb is meltingly tender and surrounded by a thick, fiery red gravy.
Step 6 Let the curry rest for 10 minutes before serving. Enjoy piping hot with steamed basmati rice or fresh naan.
