Ingredients
- 1 cup Whole Black Lentils (Urad Dal), soaked overnight
- 1/4 cup Red Kidney Beans (Rajma), soaked overnight
- 3 tbsp ghee or unsalted butter
- 1 large onion, finely chopped
- 1 tbsp ginger-garlic paste
- 2 cups fresh tomato puree
- 1 tsp Premium Cumin Seeds
- 1.5 tsp Kashmiri Chilli Powder
- 1 tsp Pure Ground Turmeric
- 1 tsp Authentic Garam Masala
- 1 tbsp dried fenugreek leaves (Kasuri Methi)
- 1/2 cup heavy cream (plus extra to garnish)
- Salt to taste
Method
Step 1 Drain the soaked black lentils and kidney beans. Transfer them to a pressure cooker with 4 cups of water and a pinch of salt. Cook for 5-6 whistles until they are completely soft and creamy. Lightly mash a portion of the lentils with the back of a spoon to thicken the base. Set aside.
Step 2 In a heavy-bottomed pot or Dutch oven, heat the ghee or butter over medium heat. Add the cumin seeds and let them crackle, followed immediately by the finely chopped onions. Sauté until the onions turn a deep, golden brown.
Step 3 Stir in the ginger-garlic paste and cook for a minute until fragrant. Pour in the fresh tomato puree, then add the turmeric and Kashmiri chilli powder. Simmer the masala, stirring occasionally, until the oil begins to separate from the edges of the pan.
Step 4 Pour the cooked lentils and beans into the pot along with their cooking water. Stir well to combine, cover the pot, and let it slow-cook on a low flame for at least 45 minutes to an hour. Stir occasionally to prevent sticking. (The longer it simmers, the richer the flavor becomes).
Step 5 Once the dal is thick and luscious, stir in the garam masala, crushed Kasuri Methi, and heavy cream. Simmer for a final 5 minutes. Garnish with a swirl of extra cream and a dollop of butter. Serve piping hot.
Chef's Tip: Patience is the secret ingredient for Dal Makhani. Slow-cooking allows the starches to break down naturally, creating that signature silky texture without relying entirely on heavy cream. Crushing the Kasuri Methi tightly between your palms before adding it will release its essential oils for a powerful, aromatic finish.
